Mandarin Orange Zucchini Bread

INGREDIENTS

1 cup light brown sugar, lightly packed

1 ½ cups all-purpose flour

½ teaspoon salt

1 teaspoon baking soda

1 teaspoon cinnamon

1 cup raw zucchini, coarsely grated

1 medium raw carrot, coarsely grated

½ cup nuts, chopped
-
½ cup raisins (optional)

2 large eggs
-
Zest from3 mandarin oranges

½ cup fresh squeezed mandarin juice

¼ cup vegetable oil
DIRECTIONS
Preheat oven to 350 degrees F. Lightly grease 9 x 5 inch loaf pan. In large bowl, stir together sugar, flour, salt, baking soda and cinnamon. Stir in zucchini, carrot, nuts, eggs orange juice, oil, and zest.
Bake approximately 1 hour, or until a fork inserted in the center comes out clean. Remove from pan, and cool on a wire rack.
Freezes well.
